Version 0.5.0 brings support for targeting Steam Playtest. Now when you select Steam, a checkbox will allow you to target a different Publish Profile. 

You can set this up using the same dialog, to which I have added a new tab to specify the details of the Playtest App (App Id and Depot config mainly).
